Banana nut muffins




What I had:
  • 1 18 cup all purpose flour
  • 1 12 teaspoon baking powder
  • 12 teaspoon salt
  • 12 teaspoon cinnamon
  • 2   overripe bananas
  • 12 cups sugar
  • 14 & 18 cup coconut oil
  • 1 egg
  • 12 cup pecans, chopped (optional)
What I did:
  • Mixed the flour, baking powder, salt & cinnamon in a bowl
  • Mixed the bananas, sugar, egg & coconut oil using a hand mixer in a second bowl
  • Poured the dry ingredients into the wet ones and mixed well
  • Stirred in the pecans
  • Divided the mix into 12 muffin cups
  • Baked for 29 minutes at 375 degrees
  • Let cool for 10 minutes before attacking them

Mac and cheese muffins

Or cupcakes, as Oli called them.


What I had:
  • Ronzoni small elbow macaroni, entire box cooked al dente
  • 3 oz shredded gruyere cheese
  • 3 oz shredded mozzarella cheese
  • 16 oz cut spinach (I used frozen, defrosted and drained)
  • 1 tbsp butter
  • 1 tbsp all purpose flour
  • 2 cloves garlic, minced
  • 1 cup 2% milk
  • 1 egg + 1 egg white
  • Salt, pepper, paprika, onion powder
What I did:
  • Melted the butter over medium heat in a medium sauce pan
  • Added the flour and whisked it fast to avoid clumping
  • Poured the milk and garlic in, continuously whisking
  • Brought it to a boil and added both cheeses, mixing till its a creamy cheese sauce
  • Mixed the pasta, spinach and cheese sauce in a large bowl till everything is covered in cheese
  • Poured heaping spoonfuls into a greased muffin pan
  • Baked at 400 for 15 minutes
  • Let sit for 5 minutes before taking the muffins out
Next time, I would add more cheese. I think I used more pasta than the original recipe did here.

Beefy biscuit cups

What I had:
  • 3/4 pound ground beef
  • 1/2 cup barbeque sauce
  • 1 tablespoon dried minced onion
  • 1 (12.0 ounce package) refrigerated biscuit dough (I had the jumbo ones and it worked out)
  • 1/3 (cup) shredded Cheddar cheese

What I did:
  • Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
  • In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
  • Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the sides of each cup. Spoon a portion of the meat mixture into each dough cup.
  • Bake in preheated oven for 15 minutes. Sprinkle with cheese, and bake for 3-6 more minutes, keeping an eye on it so it doesn't burn.

Notes after eating it:
  • Smaller biscuits might be better because they might rise up around the beef, but it didn't matter, they looked pretty this way too.
  • I would add more seasoning to the beef mixture, it was slightly bland.
  • Toddler loved it!
