Pao de Queijo


We’ve been in love with these little balls of cheesy bread since we had them at a Brazilian steakhouse. I’ve made them many times but never saved the recipe. Jeff declared this batch to be the best, so I am saving it this time. 

What I had:

1 cup tapioca flour
1/2 cup milk
1/4 cup oil
1 egg, beaten
1/2 tsp salt
1 cup grated cheese (I used a mix of Parmigiano Reggiano & Fontina)

What I did:

  • Heated milk, salt, and oil on stove till bubbling.
  • Poured this liquid into the tapioca flour and mixed till a sticky dough was formed.
  • Mixed in the egg; felt hard at the beginning but took a minute and it was easier done than I thought.
  • Mixed in the grated cheese.
  • Baked at 375 degrees for 20 minutes, turned the oven off, and let them sit for another 5 to get the exterior crispy.
Ate way too many of them right out of the oven - they are bite sized and delicious and very easy to keep eating till you feel sick. So beware!

Beth's grandma's crescent rolls

 
What I had:

  • ¾ cup warm water
  • 2 packages/ 0.5 ounce yeast
  • 4 cup flour
  • ½ cup sugar
  • 1 tsp salt
  • 2 eggs
  • ½ cup Crisco


What I did:

  • Dissolved yeast in water. Add all ingredients, saving half the flour.
  • Stir, then add rest of the flour, mix until smooth
  • Cover and let rise for 1.5 hrs
  • Divide in half, roll each half out in a circle and cut into 8 sections like pizza
  • Roll into crescents, brush with melted butter, sprinkle salt/sesame seeds/everything bagel seasoning
  • Cover and let rise for half an hour
  • Bake at 400 for 12-15 minutes
  • Try not to eat them all in 15 minutes or less!

Biscuit wafles stuffed with omelets

Biscuit waffles stuffed with cheesy omelet
What I had:
  • Pillsbury Grands biscuits
  • 9 eggs
  • shredded cheese - I used taco style
  • red onion chopped
  • 3 cloves garlic, minced
  • paprika
  • garlic
  • salt and pepper to taste
  • butter
What I did:
  • Melted butter on griddle
  • sauteed garlic till entire 3300 square foot house smelled of garlic
  • added onions till soft
  • added crumbled bacon (because I don't need an excuse to bacon)
  • beat eggs with salt, pepper and paprika and added to griddle
  • cooked till it somewhat resembled a large omelet
  • put biscuits on a baking sheet
  • cut them 3/4ths of the way
  • put a piece of omelet inside each biscuit, topped with some cheese and then closed it up
  • placed 4 on each side of my waffle maker (it's 2 sided, we are fancy that way)
  • once they were done, placed them back on the baking sheet, added more cheese (because it's cheese)
  • broiled them in the oven for 5 minutes till cheese was melted and tops were even more brown (because it's cheese and burned cheese is even better)
  • ate them with condiments of choice
 Notes for future: as you can see from the top photo, I totally could have stuffed it more (that's what she said ....)

Garlic knots

What I had:
  • a can of refrigerated biscuits
  • 1/4 cup meted butter
  • powdered garlic
  • dried oregano
  • parmesan cheese
What I did:
  • take biscuits out of the can and cut each in half
  • roll each half into long strings
  • knot each string
  • mix rest of ingredients and brush over each knot 
  • bake at 450 for 9-12 minutes keeping an eye on the bread till it's brown
  • brush some more of the butter mixture as soon as you take the knots out of the oven
  •  eat them all within 15 minutes enjoy as a side with your favorite meal

Cornbread recipe

I need to type this out because I have made this a gazillion times but never recorded it and I forgot some items today as I was telling a friend what to do.

Ingredients:
  • 2 packages corn muffin mix
  • 1 cup butter
  • 2 cans creamed corn
  • 2 cans any other kinda corn
  • 2 cups shredded cheese
  • 2 cups sour cream
  • 1 medium onion, finely chopped
  • 4 eggs
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 4 chopped jalapeno peppers
Melt butter slightly in microwave. Add everything else and mix well. Pour into a greased 9X13 pan. Bake at 375 for 50-60 minutes. Keep an eye on the top so it doesn't burn. The middle will be slightly wobbly, let it sit for 10ish minutes to let it set.
