- 1 cup tightly packed spinach
- 1 cup yogurt
- 1 large egg
- 1 tbsp olive oil
- 1 cup flour of your choice (I used all purpose)
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- spray/butter/oil for frying
- combined spinach, yogurt, egg and oil in a blender till smooth
- in another bowl, sifted the flour, sugar, baking powder, baking soda and salt till well mixed
- slowly whisked wet ingredients into dry
- poured a tablespoon at a time on a greased iron griddle
- cooked till brown
