What I had:
- 2 cup egg whites
- 1 cup frozen spinach
- 1 medium white onion chopped
- 1/2 bell pepper, chopped
- 2 jalapeno peppers, diced
- salt, pepper and garlic powder to taste
- saute the onions and both types of peppers till soft
- add spinach and cook for 2 minutes
- add salt, pepper and garlic powder
- pour the egg whites over the veggies
- cover the skillet and let it cook for 10 minutes or till eggs are cooked through
